- 2 cups milk or dairy alternative (for cornbread)

- Jimmy Dean or Owens hot sausage roll
- Chicken gizzards chopped (optional)
- 2 Red onions diced
- 3 celery stalks diced
- 1-2 Red bell pepper diced (3 bell peppers total, between the green and red)
- 1-2 Green bell pepper diced
- 1 bunch green onions
- 4 cloves garlic minced
- Sage seasoning to taste
- Onion powder
- Habanero pepper or red pepper flakes (add for your spice comfort level)
- Salt to taste
- Seasoned soy sauce or liquid aminos (optional)
- Olive oil
- 2 - Tbs of margarine or butter
- 2-32 oz Swanson chicken broth
Instructions to make Aunty Carlisa’s cornbread stuffing with a twist
- Prepare cornbread as instuctions state and add honey for taste before baking. May need to add additional honey once baking is complete to reach desired sweetness. Crumble with hands or fork and set aside.
- Meat mixture: Cool chicken gizzards (optional)- chop and boil for 20-30 min. Add onion powder, liquid aminos (or soy sauce) to taste. Once cooked set aside.
Heat skillet and add 1 Tbs of olive oil or oil of choice. Add one diced onion and cook until semi translucent. Then add hot and sage sausage rolls. Cook, stirring and breaking up sausage until it is brown (can drain excess oil) Add sage seasoning, pepper And salt to taste. Add gizzards, sauté for an additional 2 min and set aside - Vegetable mixture: Add 2 teaspoons of butter or equivalent to hot skillet. Add onion, bell peppers (3 total), celery and sauté until slightly brown.
Then toss in green onions and minced garlic and sauté for another 2-3 min. - Mix vegetable and meat mixture together. For preferred taste, taste test mixture. Add habenero pepper for extra kick and a dash of soy or liquid aminos.
- Preheat oven to 400 F
- In large baking pan (12” x 16”) add crumbled cornbread. Spoon in meat vegetable mixture and mix with cornbread (may not need all of cornbread or meat mixture. It depends on how meaty you want your cornbread stuffing) * tip- extra meat mixture could be used for breakfast tacos, spaghetti and a variety of recipes.
- Once you have desired mix, pour chicken broth evenly over entire mixture. However, make sure dressing is not completely drowned in broth. Broth should reach about 1/4 of the mixture.
Bake in oven for 1 hr (30 min covered with foil- 30 min uncovered) or until broth is fully absorbed into dressing. - Enjoy!
