  1. Marinate Beef and Mushrooms. Mix beef, shittake mushrooms, 1 clove of minced garlic, 1 tsp sugar, black pepper, 2 tsp soy sauce, and 1 tsp sesame oil. Cover and keep in fridge.
  2. Make egg garnish. Separate egg yolk and cook. Be sure to spread thinly.
  3. Blanch spinach for 30 sec and rinse with cold water. Strain and cut a few times. Place in bowl with 1 tsp soy sauce and 1 tsp sesame oil.
  4. Boil noodles. Cover and cook for 1 min. Stir so they don't stick together. Cook another 7 min until soft and chewy.
  5. Cut noodles and place in bowl with the spinach, 2 tsp sesame oil, 1 tsp soy sauce, and 1 tsp sugar. Mix well. Add more sesame oil if needed to prevent noodles from clumping together.
  6. Heat up skillet with medium heat. Add 2 tsp oil, onions, green onions, white mushrooms, and salt. Stir fry for 2 min. Place with noodle bowl.
  7. Heat up skillet again. Add 2 tsp oil and carrot and stir fry for 20 sec. Add red bell pepper and stir fry another 20 sec. Place in noodle bowl.
  8. Heat up skillet again. Add 2 tsp oil, beef and mushroom mixture. Stir fry for a few minutes. Place in noodle bowl.
  9. Mix noodle bowl. Add 1 minced garlic clove, 1 tbsp soy sauce, 1 tsp sugar, black pepper, 2 tsp sesame oil, egg garnish, sesame seeds. Mix and serve.
